Wasabi Mousse

A refreshing dessert featuring a creamy wasabi mousse topped with fresh mango slices and a hint of lime.

Ingredients

  • 80 ml freshly squeezed lime juice
  • 4 tbsp sake (rice wine)
  • 5 tbsp powdered sugar
  • 1 tsp ground green tea
  • 250 g whipping cream
  • 250 g crème fraîche
  • Wasabi paste
  • 1 Mango
  • 2 tbsp butter
  • mint leaves for garnish

Instructions

    Whisk the sake with 4 tbsp powdered sugar, heat until the sugar dissolves. Remove from heat, dissolve the green tea in it and stir in half of the lime juice. Let cool.

    Combine the cream, crème fraîche, tea syrup, and 1/4 tsp wasabi paste; beat as stiffly as possible. Cover and chill in the refrigerator for 1 hour.

    Peel the mango. Remove the flesh from the pit and cut into strips. Mix remaining lime juice with leftover powdered sugar and marinate the mango strips in it.

    Remove the mango strips from the marinade, let them drain if desired. In a pan, melt butter and lightly sear the mango strips on each side. Keep warm. Bring the marinade to a boil in the pan.

    For serving, use a spoon to scoop portions of mousse onto plates. Garnish with mango slices and drizzle with the pan syrup. Optionally dust with powdered sugar and add mint leaves. Serve immediately.
