Ingredients

  • 30 g pistachio kernels (2 tbsp)
  • 50 g fresh blackberries
  • 2 sprigs Mint
  • 400 g frozen blackberries
  • 400 g yogurt (3.5 % fat)
  • 50 g finely ground birch sugar
  • 1 tsp lemon juice
  • 40 ml blackberry juice

Instructions

    Chop pistachios lengthwise. Wash and drain the blackberries well. Rinse the mint, pat dry, and pluck the leaves.

    Blend frozen blackberries, yogurt, birch sugar, lemon juice, and blackberry juice in a blender until smooth.

    Scoop the ice cream into bowls, sprinkle with pistachios, and garnish with fresh blackberries and mint leaves before serving.
