Chocolate Chili Mousse

Ingredients

  • 1 red chili pepper
  • 150 g dark chocolate
  • 20 ml rum
  • 2 Eggs
  • 40 g sugar
  • 125 ml whipping cream

Instructions

    Wash the chili, cut it lengthwise, remove seeds and finely chop. Roughly break the chocolate and melt it over a hot water bath with the rum. Remove from heat. Separate the eggs; beat the whites with sugar into stiff peaks. Whisk the yolks over a hot, not boiling water bath until frothy. Take off heat again.

    Beat the cream to stiff peaks. Add the chocolate-chili mixture to the yolk batter and stir in with a whisk. Cool the mixture in a cold water bath. Fold the whipped cream onto the chocolate mass and mix quickly with a whisk. Gently fold in the egg whites and pour the mousse into glasses. Chill for at least 3 hours.
