Ingredients

  • 75 g dark chocolate
  • 75 g nougat
  • 2 eggs (separated)
  • 2 tbsp powdered sugar
  • 20 ml whisky
  • 1 tsp grated orange zest
  • 200 ml heavy cream (at least 30% fat)
  • 2 tbsp cocoa powder (for dusting)
  • 2 tbsp chocolate shavings (for garnish)

Instructions

    Melt the chocolate and nougat over a hot, non-boiling water bath. Whisk the yolks with powdered sugar over another hot, non-boiling water bath until thick.

    Slowly fold in the melted chocolate, then stir in the whisky and orange zest. Chill the mixture in a cold water bath, beat the cream and egg whites separately to stiff peaks, and gently fold into the cooled base.
