Ingredients

  • 1 small ciabatta
  • 6 tbsp oil
  • Salt
  • freshly ground pepper
  • 8 Cherry tomatoes
  • 1 Red Onion
  • 1 bunch Basil
  • 4 tbsp white wine vinegar
  • 1 tbsp liquid honey
  • 1 tbsp mild mustard
  • 1 Garlic clove
  • 2 tbsp seasoned broth

Instructions

    Coarsely dice the ciabatta and toss with 2 tbsp oil. Season with salt and pepper and spread on a baking sheet lined with parchment paper. Roast in a preheated oven (220 °C) for 10 minutes on the second rack from the bottom.

    Dice the tomatoes, peel the onion and slice into very thin rings. Rinse the basil, shake dry, and pluck the leaves from the stems.

    Whisk together vinegar, oil, honey, mustard, freshly pressed garlic, and broth until smooth. Then stir in the remaining oil. Combine tomatoes, onion rings, basil, and bread cubes with the vinaigrette and serve.
