Spoonsparrow presents a festive mango pineapple salad featuring fresh fruit and a zesty dressing.
Ingredients
- 1 ripe pineapple
- 1 ripe Mango
- 0.5 untreated lemon (juice)
- 6 tbsp orange juice
- 5 tbsp plain yogurt
- 3 tbsp heavy cream
- 1 tbsp liquid honey
- 2 tbsp mint (cut into strips)

Peel the pineapple thoroughly, cut it lengthwise in half and slice into thin rounds.

Peel the mango, cut the flesh away from the pit and divide into narrow strips. Arrange the fruit decoratively on a plate and drizzle with lemon juice.

Whisk together orange juice, yogurt, cream, and honey until frothy, taste and adjust seasoning, then pour over the fruit. Sprinkle with mint strips before serving.
