Warm Asparagus Tomato Salad

The warm asparagus tomato salad looks great, tastes fantastic, is lightning-fast to prepare and still low in calories.

Ingredients

  • 200 g green asparagus
  • 0.5 tsp olive oil
  • Salt
  • Pepper
  • 0.5 lime
  • 100 ml Mediterranean vegetable broth
  • 0.5 tsp mustard
  • 120 g medium tomatoes (2 medium tomatoes)

Instructions

    Wash the asparagus. Trim off the woody ends, peel the lower third of the stalks and cut the asparagus diagonally into pieces.

    Heat the oil in a non‑stick pan over medium heat. Sauté the asparagus, turning frequently, for about 8 minutes until golden brown all around. Season with salt and pepper.

    Squeeze half a lime and pour the juice into a small bowl. Add the broth and mustard, then whisk with a spoon or whisk until combined.

    Wash the tomatoes, quarter them, remove stems, and dice the flesh finely. Add the tomato cubes to the vinaigrette. Arrange the asparagus on top of the tomato‑vinaigrette.
