Colorful Vegetable Salad
Vibrant vegetable salad with apple and yogurt sauce from Spoonsparrow: Light vegetable side dish for summer evenings on the terrace.
Ingredients
- 1 kohlrabi
- 2 small tart apples
- 0.5 cucumber
- 1 yellow bell pepper
- 0.5 bunch dill
- 0.5 lemon
- 200 g yogurt (3.5% fat)
- Salt
- Pepper
- 2 leaves salad (e.g., lettuce, radicchio)
- 1 Red Onion
Instructions

Peel the kohlrabi. Wash, dry, grate, quarter, and core the apples.

Wash, peel, halve lengthwise, and core half a cucumber. Quarter the bell pepper, remove seeds, and wash it.

Cut the kohlrabi, apples, cucumber, and pepper into roughly equal cubes.

Wash the dill, shake off excess water, pluck the stems, and finely chop. Squeeze 2 tablespoons of juice from half a lemon.

Whisk yogurt, lemon juice, and dill together in a bowl.

Toss the vegetables with the yogurt sauce, season with salt and pepper, and let rest for 15 minutes.

Meanwhile, wash, clean, and dry the salad leaves. Peel the onion and slice into very thin rings. Arrange the salad leaves on a plate, top with the vegetable mixture, and sprinkle onion rings over it.
