Ingredients

  • 250 g wild strawberries (e.g., blackberry, cranberry, blueberry)
  • 1 egg
  • 1 yolk
  • 0.5 Vanilla pod
  • 40 g powdered sugar
  • 100 g cream cheese
  • 100 ml whipping cream
  • 1 tsp lemon juice

Instructions

    Wash the berries and roughly mash half with a fork. Separate the egg white and place it in a bowl to chill. Add the yolks to a mixing vessel. Split the vanilla pod lengthwise, scrape out the seeds, and add them with powdered sugar to the yolks. Whisk over a hot water bath until thick and foamy. Cool quickly by whisking into ice water. Fold the berry puree into the cream cheese. Next, whip the cream stiffly and fold it into the chilled egg mixture. Beat the egg whites with lemon juice stiffly and fold them into the ice cream base. Fill four portion molds lined with plastic wrap with the mixture. Cover and freeze completely for at least 5 hours.

    Remove the semifreddo from the freezer about 5 minutes before serving. Plate, peel off the film, and dust with fresh berries, physalis, berry sauce, and powdered sugar as desired.
