Waffle Cake with Cherry Cream Filling

Ingredients
- 500 g mixed cherries
- 250 g mascarpone
- 1 tsp lemon juice
- 0.5 tsp organic lemon zest
- 2 tbsp Maple syrup
- 100 ml whipping cream
- mint (for garnish)
- butter (for waffle iron)

Separate the eggs and beat the whites with a pinch of salt until stiff peaks form. Beat the yolks with softened butter, sugar and vanilla sugar until creamy. Alternately fold in milk and flour. Fold in the egg whites. Bake about four waffles from the batter one after another.

Wash the cherries, drain them and leave them whole or pit them as desired. Mix mascarpone with lemon juice, zest and maple syrup. Whip the cream to stiff peaks and fold it in. Sweeten further if desired.

Place a waffle on a plate and spread 1/4 of the cream over it. Top with cherries and place another waffle on top. Stack all ingredients into a small cake and serve garnished with mint.
