  • 4 eggs
  • Salt
  • 120 g butter
  • 120 g sugar
  • 0.5 tsp lemon zest
  • 0.5 vanilla bean (extract)
  • 130 g buttermilk
  • 300 g flour
  • 60 g ground almonds
  • 1.5 tsp Baking Powder
  • 3 ripe apples
  • 2 tbsp butter
  • 3 tbsp powdered sugar
  • oil (for waffle iron)
  • 4 scoops vanilla ice cream

Instructions

    Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Cream together the butter, sugar, lemon zest, and vanilla extract; fold in the yolks and buttermilk gradually. Sift the flour with almonds and baking powder into the mixture and stir to combine. Gently fold in the beaten egg whites. Let the batter rest for 20 minutes.

    Peel, quarter, core, and dice the apples into 1 cm cubes; toss them with lemon juice.

    In a skillet melt butter, add apple cubes, sauté briefly, sprinkle powdered sugar, and caramelize until glossy.
