Sweet Waffles with Peach

Ingredients
- 3 eggs
- 250 g flour
- 1 tsp lemon zest
- 40 ml peach liqueur
- 4 tbsp sugar
- 1 tsp Baking powder
- 375 ml milk
- Salt
- butter (for greasing)
- 4 ripe peaches
- 150 ml whipping cream
- 1 packet vanilla sugar
- powdered sugar (for dusting)

Separate the eggs and whisk the yolks with flour, lemon zest, liqueur, sugar, baking powder, and milk; let rest for about 20 minutes.

Preheat the waffle iron and lightly grease it.

Beat the egg whites with a pinch of salt until stiff peaks form and fold into the batter. Pour 1–2 tbsp of batter into the iron, spread evenly, and bake successive golden‑brown waffles.

Keep finished waffles warm in an oven at 80°C (top and bottom heat) as desired.

Meanwhile, blanch peaches, shock them, halve, pit, and cut into thin slices.

Whip cream with vanilla sugar until stiff. Arrange waffles on plates, dust with powdered sugar, and garnish with peach slices and a dollop of whipped cream.
