Ingredients

  • 250 ml milk
  • 1 EL sugar
  • 0.5 packet vanilla pudding powder
  • 600 g mixed berries
  • 3 eggs
  • 150 g flour
  • 200 ml milk
  • 1 EL sugar
  • 1 EL oil
  • 1 EL rum
  • butter (for the iron)
  • 150 g whipping cream
  • 100 g pistachios
  • 1 packet vanilla sugar
  • powdered sugar

Instructions

    Whisk pudding powder with a little cold milk until smooth. Bring remaining milk to a boil with sugar, stir in pudding powder, bring back to a boil, remove from heat and let cool while stirring occasionally.

    Wash berries, rinse, and pat dry.

    Separate eggs for the waffles. Beat yolks with flour, milk, oil, rum, and sugar into a smooth batter. Whisk egg whites until stiff peaks form and fold into batter.

    Preheat waffle iron, pour about 4 tablespoons of batter onto greased iron and bake golden yellow for about 3 minutes; remove waffles and cool on a rack.

    Grind pistachios finely in a hand grinder.

    Whip cream with vanilla sugar to stiff peaks, fold in pistachios, then fold into cooled pudding. Transfer mixture to a piping bag and pipe onto half of the waffles. Distribute berries over them and top remaining waffles; dust with powdered sugar.
