Raspberry Waffles

Ingredients
- 4 eggs
- Salt
- 120 g butter
- 80 g sugar
- 0.5 tsp lemon zest
- 0.5 vanilla bean (pulp)
- 250 ml buttermilk
- 200 g Flour
- 1 tsp Baking powder
- butter (for the waffle iron)
- 200 ml whipping cream
- 3 tbsp powdered sugar
- 400 g fresh raspberries
- Chocolate shavings (for garnish)

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Cream the butter, sugar, lemon zest, and vanilla pulp together, then gradually fold in the yolks and buttermilk.

Sift the flour with baking powder and stir it into the batter. Gently fold in the beaten egg whites. Spoon 2–3 tbsp of batter onto a preheated, greased waffle iron, close, and bake until golden brown. Repeat with remaining batter.

Remove the finished waffles and repeat the process with any leftover batter. Whip the cream with powdered sugar to stiff peaks and clean the raspberries. Plate the waffles on a dish, top each with a dollop of whipped cream, chocolate shavings, and fresh raspberries, then serve.
