Ingredients
- 450 g spelt flour type 1050
- 1 tsp baking powder (3 g)
- 2 tsp ground cinnamon (6 g)
- 140 g finest whole‑grain sugar
- 75 g melted butter
- 3 eggs
- 600 ml milk (3.5 % fat)

Sift the flour, baking powder and cinnamon into a bowl, mix in the sugar, and press a well in the center. Separate the eggs.

Whisk the melted butter with the yolks and milk in another bowl. Then stir in the dry mixture to form a smooth batter.

Beat the egg whites in a clean bowl until stiff peaks form, then gently fold them into the batter.

Preheat the waffle iron and lightly grease it. Pour a small amount of batter onto the iron, close the lid, and bake until golden yellow. Repeat with the remaining batter.
