Ingredients

  • 450 g spelt flour type 1050
  • 1 tsp baking powder (3 g)
  • 2 tsp ground cinnamon (6 g)
  • 140 g finest whole‑grain sugar
  • 75 g melted butter
  • 3 eggs
  • 600 ml milk (3.5 % fat)

    Sift the flour, baking powder and cinnamon into a bowl, mix in the sugar, and press a well in the center. Separate the eggs.

    Whisk the melted butter with the yolks and milk in another bowl. Then stir in the dry mixture to form a smooth batter.
