Vegetable Turkey Wraps with Fish

Ingredients
- 3 eggs
- 1 tsp salt
- 125 ml milk
- 150 g corn flour
- 4 tbsp plant oil
- 1 tomato
- 4 lettuce leaves
- 1 Carrot
- 1 small red chili pepper
- 1 handful coriander leaves
- 50 g cream cheese
- Salt
- Pepper
- Lemon juice
- 80 g canned tuna
- 80 g smoked turkey breast slices (sliced)

Whisk the eggs with salt, milk, 125 ml water and corn flour. Let it rest for about 30 minutes.

Wash the tomato, cut off the stem end and slice thinly. Wash and pat dry the lettuce. Peel and grate the carrot. Wash the chili, split lengthwise, remove seeds and dice finely. Rinse coriander, shake dry and chop finely. Mix cream cheese with chili and coriander. Season with salt, pepper and lemon juice.

Heat a pan with 1 tbsp oil for the wraps, pour in 1/4 of the batter and cook as an omelette while flipping for about 5 minutes. Repeat until all batter is used. Let the wraps cool and spread the cream cheese mixture on them. Distribute lettuce, tomatoes and carrot ribbons over the wraps. Drain the tuna and flake it. Slice turkey breast into strips. Spread both on the wraps and roll up. Cut diagonally in half and serve.
