Ingredients
- 2 carrots
- 200 g natural yogurt
- 50 g crème fraîche
- 1 tsp Lime juice
- Salt
- Pepper (freshly ground)
- sugar
- 1 tbsp roasted cashew nuts
- 150 g lamb's lettuce
- 4 wraps (ready-made, 20 cm diameter each)
- 12 slices roast beef

Peel the carrots and cut into thin sticks or grate. Whisk the yogurt with crème fraîche and lime juice, seasoning with salt, pepper, and sugar. Toast the cashews in a dry pan until golden yellow, remove and chop; mix into the yogurt. Rinse, wash, and pat dry the lamb's lettuce.

Warm the wraps briefly in a non‑stirred pan to make them pliable, then spread the nutty yogurt on each. Arrange carrot strips over the yogurt, top with roast beef slices, and place a narrow strip of lamb's lettuce in the center. Roll up the wraps, cut in half, and serve arranged on a plate.
