Ingredients

  • 1 Zucchini
  • 1 red bell pepper
  • 1 green bell pepper
  • 16 mushrooms
  • 16 cauliflower florets
  • 16 broccoli florets
  • 3 blue onions
  • vegetable oil (for brushing)

  • 400 ml unsweetened coconut milk

Instructions

    Wash, trim and cut the zucchini lengthwise into halves; slice each half into 8 pieces. Wash, trim, halve, deseed and remove the skins of the bell peppers; cut each pepper into 16 pieces. Rub the mushrooms with a kitchen towel to clean them. Blanch the cauliflower and broccoli florets in boiling salted water for 3 minutes, drain, shock in ice water and dry well. Peel the onions and cut them into a total of 16 slices.

    Thread the ingredients alternately onto 16 wooden skewers, brush with oil, lightly salt and pepper.

    Grill the skewers over high heat, turning occasionally, for about 5-8 minutes. For the sauce whisk all sauce ingredients together, season to taste and serve in four small bowls.

    Arrange the skewers on preheated plates and serve immediately with the sauce.
