Ingredients

  • 500 g red Swiss chard (or spinach)
  • 250 g Spinach
  • Sea salt
  • 1 lemon (juice)
  • 1 stalk oregano
  • 1 tbsp Olive Oil
  • Pepper (freshly ground)

Instructions

    Wash and trim the Swiss chard and spinach. Roughly chop the Swiss chard, optionally including the stems. Blanch both in salted water: spinach for about 1 minute, Swiss chard for 1–2 minutes. Shock in ice water, drain, and gently squeeze out excess moisture.

    Squeeze the lemon juice. Rinse the oregano, shake dry, strip leaves, and chop. Whisk the lemon juice into the olive oil and pour into a bowl. Toss the leafy greens with the sauce, plate on dishes, season with sea salt and pepper, and serve.
