Vegetable Ham Omelette

Ingredients
- 150 g cooked ham
- 1 bunch spring onions
- 200 g green peas (frozen)
- 8 eggs
- 75 ml milk
- Salt
- pepper (from grinder)
- 2 tbsp freshly chopped parsley
- 2 tbsp freshly chopped basil
- 60 grated parmesan
- 2 tbsp butter

Cut the ham into strips. Wash, trim and slice the spring onions into rings.

Thaw the peas. Beat the eggs with the milk, season with salt and pepper, then stir in the herbs and cheese. In a large pan, brown the ham in hot butter, remove it, and sauté the spring onions. Add the ham and peas back to the pan, pour over the egg mixture, cover, and let set on low heat for about 15 minutes. Serve sprinkled with extra pepper.
