Stuffed Omelette with Bacon, Mushrooms and Cheese

Ingredients
- 10 eggs
- 150 ml milk
- butter
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 150 g alpine cheese
- 200 g mushrooms
- 4 thick slices of breakfast bacon
- vegetable oil
- 4 spring onions (cut into rings)
Instructions

Whisk the eggs vigorously and stir in the milk. Season with salt, pepper and nutmeg.

Clean the mushrooms and slice them. Heat 2 tbsp oil in a pan and sauté the mushrooms until golden brown. Season with salt and pepper.

Cut the bacon into strips and fry them on all sides in the hot pan.

Grate the cheese coarsely.

Heat 1 tsp butter in a small pan and cook each omelette slowly over medium heat for 4-6 minutes on both sides until golden yellow. Place the finished omelettes on plates, fill with cheese, bacon, spring onions and mushrooms, season with salt and pepper, fold together and serve immediately.
