Polenta Vegetable Omelette

Ingredients
- 2 Eggs
- 150 g polenta (cornmeal)
- 50 g starch
- 1 tsp salt
- 200 ml milk
- Salt
- Pepper
- oil (for the pan)
- 2 peppers
- paprika (half red and half yellow each)
- 100 g cherry tomatoes
- 2 Garlic cloves
- 0.5 bunch Parsley
- olive (1 tbsp black and 1 tbsp green pitted)
- 100 g shrimp

Wash peppers and paprika, halve them, remove seeds, cut everything into fine strips. Wash tomatoes, slice them. Peel garlic, finely chop. Wash parsley, also finely chop. Wash shrimp, pat dry, halve olives.

Separate eggs, beat egg whites very stiffly. Whisk polenta, starch, salt, sugar, yolk and milk together. Mix in vegetables, parsley, shrimp, olives and garlic, fold in beaten egg whites, season with salt and pepper. Heat oil in a pan, ladle one scoop of the vegetable batter into it, bake until golden yellow on both sides.
