Ingredients

  • 1 firm potato
  • 1 blue potato
  • 1 small potato
  • Salt
  • 1 l rapeseed oil

Instructions

    Peel potatoes and sweet potatoes, then cut into as thin slices as possible. Place potato slices in cold water for 30-40 minutes to leach out starch. Pat the slices dry thoroughly.

    Heat oil to 170 °C and fry potato slices until crisp and golden‑yellow. Remove, drain on paper towels, and season with salt to taste.
