Ingredients
- 4 sheets rice paper
- 4 sheets iceberg lettuce
- 2 carrots
- 1 red bell pepper
- 1 handful soy sprouts
- 1 tbsp White Wine Vinegar
- 3 tbsp salad oil
- Salt
- pepper (ground)
- dark soy sauce
- 1 cm ginger (peeled, grated)
Instructions

Soak the rice paper between damp kitchen towels.

Peel and cut the carrots into thin sticks; blanch in boiling salted water for 1-2 minutes, then shock in ice water.

Clean, wash, and pat dry the lettuce leaves.

Wash, halve, deseed, and slice the bell pepper into fine strips.

Whisk together vinegar, oil, salt, and pepper.

On each sheet of rice paper, spread 1–2 lettuce leaves, top with some carrot sticks, bell pepper strips, and soy sprouts; drizzle with the dressing and carefully roll into a parcel, closing the ends. Slice diagonally across the middle and serve. Offer dark soy sauce on the side.
