Vegan Turkish Pizza

Ingredients
- 500 g flour
- 1 pinch sugar
- 0.5 tsp Salt
- 1 packet dry yeast
- 3 Tbsp plant oil
- flour (for working)
- 200 g soy granules
- 4 Spring Onions
- 1 Garlic clove
- 3 peppers
- a handful fresh parsley
- 4 Cherry Tomatoes
- 2 tbsp olive oil
- 2 tbsp Tomato paste
- 2 tsp paprika flakes
- 0.5 tsp cumin
- Salt
- pepper (ground)
- 1 onion

Add flour, sugar and salt to a bowl, press a well into the flour and add the yeast. Stir in about 250 ml lukewarm water until smooth, sprinkle some flour from the side and make a pre-dough. Cover and let rise in a warm place for about 15 minutes. Then fold in the remaining flour and knead into a smooth dough. Add more flour or water if needed. Cover with a kitchen towel and let rise again in a warm place for about 45 minutes.

Preheat oven to 180°C (356°F) with upper and lower heat.

For the topping, cook the soy granules according to the instructions and drain them.

Wash, trim and finely chop the spring onions. Peel and mince the garlic. Wash, trim and finely chop the peppers. Wash parsley, shake dry and roughly chop. Wash tomatoes, remove stems and dice small. In a pan sauté the soy granules in 1 tbsp hot oil. Briefly fry garlic and onions. Stir in tomato paste, add tomatoes and peppers and season with paprika, cumin, salt and pepper. Remove from heat and fold in 2/3 of the parsley.

Knead the dough again on a floured surface, incorporating the oil. Roll into four flatbreads and place on two baking trays lined with parchment paper. Brush each flatbread thinly with the remaining olive oil. Spread the topping over them and bake for 20-25 minutes.

Peel the onion, slice into fine rings and scatter over the pizzas with the remaining parsley.
