Smoked Salmon Pizza

Ingredients
- 300 g flour
- 150 ml lukewarm water
- 10 g fresh yeast
- 1 tsp salt
- 1 tbsp oil
- 250 g crème fraîche
- 3 tbsp chopped dill
- 2 red onions
- 4 tbsp capers (pickled in vinegar)
- 400 g smoked salmon
- oil for baking tray
- pepper from grinder
Instructions

Knead flour, yeast, water, salt and oil into a dough. The dough should be soft but not sticky; add more flour or water if needed. Cover well and let rest in a warm place for 1 hour.

Preheat oven to 250°C. Peel and dice the onions. Slice the salmon into thin strips. Rinse capers in cold water and drain thoroughly. Brush two round baking trays with oil. Knead dough again, divide into two halves, roll each into a circle using a rolling pin and place on the trays.

Bake in the hot oven for 10 minutes until golden brown (bake pizzas one at a time). Spread crème fraîche on the warm pizza base, sprinkle onions, lay salmon strips, scatter capers, garnish with dill and serve immediately. Finish with a generous grind of pepper just before serving. Pair with white wine.
