Salmon Pizza

Ingredients
- 500 g flour
- 1 cube yeast
- 1 pinch salt
- 3 tbsp olive oil
- 240 ml lukewarm water
- 300 g passata (ready-made)
- 2 Garlic cloves
- 2 stems basil
- 2 tbsp olive oil
- Salt
- Pepper
- 250 g sour cream
- 50 g quark
- 2 tbsp chopped dill
- 50 g caviar (more if desired)
- 40 g capers
- 250 g smoked salmon (thin slices)
- dill sprigs (for garnish)
Instructions

Whisk yeast with water until smooth, then add the remaining dough ingredients to a bowl and knead with an electric hand mixer’s dough hooks into a smooth dough. Cover and let rise in a warm place for about 45 minutes.

Place passata in a bowl. Peel garlic and press it in. Slice basil leaves into fine strips and mix with olive oil, salt, and pepper.

Knead the dough on a floured surface, then roll thin onto an oiled baking sheet. Spread tomato sauce over it. Bake in a preheated oven at 250°C (lower rack) for about 15 minutes until crisp.

Whisk quark with sour cream until smooth, stir in chopped dill and some caviar, season with salt and pepper.

Remove the finished pizza from the oven and dollop the dill-sour cream onto it. Sprinkle caviar and capers over the top, then lay smoked salmon slices on the pizza. Cut into pieces and serve immediately garnished with dill sprigs.
