Vegan Sweet Potato Bread

Ingredients
- 400 g wheat flour
- 100 g whole wheat flour
- 42 g yeast (1 cube)
- 1 tsp sugar
- 150 ml almond or soy drink (soy milk)
- 200 g sweet potatoes (cooked the day before)
- 1 tbsp salt
- 4 Tbsp sunflower oil

Combine both flours in a bowl and form a well in the center. Sprinkle the yeast and sugar into the well. Warm the milk to lukewarm and pour over the yeast. Stir with a little flour to make a pre‑starter, cover and let rise for about 30 minutes.

Peel the sweet potatoes and press through a potato masher or grate finely. Add the salt and oil to the pre‑starter and knead everything together with about 200 ml lukewarm water into a smooth dough. Adjust the water slightly if needed so the dough does not stick to your hands. Cover and let rise for about 1 hour.

Knead again on a floured surface and shape into a loaf. Place on a baking sheet lined with parchment, score in a diamond pattern several times, cover and let rise another 30 minutes.

Preheat the oven with a heat‑proof dish of water to 200 °C fan‑forced.

Brush the dough with water before baking and bake the bread for about 50 minutes.
