Vanilla Sauce with Egg White Foam

Ingredients
- soft butter (for the molds)
- 1 tbsp ground almonds (peeled)
- 1 tbsp cocoa powder
- 5 tbsp sugar
- 4 eggs
- 1 tbsp flour
- 2 tbsp vanilla sugar
- 200 ml milk
- 200 ml whipping cream
- almond sugar (for garnish)

Preheat the oven to 200°C with fan and top heat.

Brush four souffle molds with butter. Mix almonds with cocoa and 1 tbsp sugar, then dust the molds with this mixture.

Separate the eggs. Beat the egg whites with 3 tbsp sugar until stiff peaks form. Sift flour over them and fold in gently. Fill the molds and bake for about 10 minutes.

Beat the yolks with remaining sugar and vanilla sugar until creamy. Bring milk and cream to a boil, then gradually pour into the yolk mixture while stirring. Return to the pot and heat gently under constant stirring until a creamy sauce forms (do not boil).

Fill bowls with the sauce, top with the souffles, garnish with almonds, and serve immediately.
