Vanilla Coconut Rice Pudding with Mango

- 2 Vanilla Beans
- 600 ml Coconut Milk
- 10 g ginger
- 4 tbsp cane sugar
- 150 g rice pudding grains
- 2 mangoes

Slice the vanilla beans lengthwise, scrape out the seeds and add both the beans and seeds to a pot. Add the coconut milk. Peel the ginger and slice it thinly. Add the sugar and bring the mixture to a boil. Sprinkle in the rice and reduce heat. Simmer on low with the lid half‑closed for about 25 minutes, stirring occasionally until absorbed.

Peel the mangoes all around with a vegetable peeler and cut the flesh away from the pit. Slice the flesh into strips.

Sweeten the finished rice pudding to taste with additional sugar if desired. Plate with mango strips and garnish with vanilla beans as preferred before serving.
