Vanillehörnchen

Ingredients
- 140 g soft butter
- 100 g sugar
- 1 vanilla pod
- 1 Egg white
- 200 g Flour
- 100 g peeled and ground almond kernels
- 1 tbsp sugar
- 2 tbsp powdered sugar

Beat the fat until fluffy and let the sugar fall in. Split the vanilla pod lengthwise, scrape out half of the seeds and add them. Fold in the egg white and beat everything into a creamy mixture.

Stir in the flour and almonds. With floured hands shape the dough into three rolls about 2 cm in diameter. Wrap in foil and chill for 1 hour.

Preheat the oven to 180°C. Grease or line a baking sheet with parchment paper. Cut the dough into finger‑thick slices. Roll them with floured hands into small sausages with pointed ends, then shape into horns and place on the tray. Bake for 15 minutes.

Meanwhile scrape out the remaining vanilla seeds. Mix with sugar and powdered sugar. While still hot roll the croissants in it. Place on a cooling rack and let cool.
