Vanilla Parfait

Ingredients

  • 250 ml Whipping Cream
  • 3 eggs
  • 1 vanilla pod
  • 75 g powdered sugar
  • 1 tsp lemon juice
  • oil (for the mold)

    Beat the cream stiff and chill.

    Separate the eggs. Place the whites in a large bowl and chill. Put the yolks in a mixing bowl. Split the vanilla pod lengthwise and scrape out the seeds. Add to the yolks with powdered sugar. Whisk over a hot water bath until thick and frothy. Then cool quickly by whisking into ice water.

    Next fold the whipped cream into the cold egg mixture. Beat the whites with lemon juice stiff and fold into the ice cream base.

    Oil the terrine mold lightly. Line it with cling film overhanging. Pour in the parfait mixture and smooth the top. Cover with film and freeze completely for at least 6 hours.

    Take the ice about 10 minutes before serving out of the cold. Unpack the half-frozen portion, pour it out and remove all film.

    Slice into rounds (best with a knife briefly dipped in hot water) and serve garnished with mint as desired.
