Vanilla Cherry Gratin

Ingredients
- 300 g sour cherries
- 20 ml cherry schnapps
- 1 tbsp Lemon Juice
- cinnamon powder (for dusting)
- Lemon balm (for garnish)
- 1 Vanilla bean
- 400 ml milk
- 4 egg yolks
- 100 g sugar
- 20 g corn starch
- a pinch salt

Preheat the oven to 200°C fan.

Split the vanilla bean lengthwise, scrape out the seeds and add both the seeds and bean to the milk; bring to a boil. Remove from heat and let cool slightly. In a bowl whisk the egg yolks with sugar until creamy. Sift in the corn starch and mix well. Slowly pour the warm milk into the egg mixture in a thin stream, stirring continuously. Return everything to the pot, remove the vanilla bean, and cook over low heat until thickened (do not boil). Pour the vanilla custard into oven‑proof ramekins.

Wash and pit the cherries. Marinate with schnapps and lemon juice for about 10 minutes, then spread over the custard in the ramekins. Bake in the preheated oven for about 20 minutes. Dust with cinnamon and garnish with lemon balm before serving.
