Here comes the basic recipe for a Spoonsparrow vanilla sauce ☞ Low‑fat milk and soy cream make it possible!

Ingredients

  • 350 ml milk (1.5% fat)
  • 3 tsp cornstarch
  • 0.5 Vanilla bean
  • 2 tsp coconut palm sugar
  • 50 ml Soy cream
  • 1 very fresh egg yolk (M)

Instructions

    Take 3 tbsp of the milk and place in a small bowl. Add the starch and whisk smooth with a whisk.

    Halve the vanilla bean lengthwise with a sharp knife and scrape out the seeds.

    Add the vanilla seeds, coconut palm sugar, and remaining milk to a small saucepan; stir and bring to a boil with a whisk.

    Remove the pan from heat, stir in the pre‑mixed starch, and return to heat while stirring until it boils again.

    Pour the sauce into a bowl and fold in the soy cream.

    Separate the egg, whisk the yolk into the vanilla sauce (use the white elsewhere). Let the sauce cool for about 40 minutes.
