Ingredients
- 50 g butter
- 50 g coconut blossom sugar
- 100 g Spelt Whole Grain Flour
- 1 tsp cinnamon
- 600 g apricots
- 200 g gooseberries
- 1 vanilla pod
- 1 tbsp honey
Instructions

Cut the butter into pieces. Combine with coconut blossom sugar, flour and cinnamon in a bowl. Rub together by hand to form crumbs and refrigerate.

Wash the apricots, halve them, pit them and cut into wedges. Wash the gooseberries and remove stems.

Split the vanilla pod lengthwise with a knife and scrape out the seeds.

Mix the fruits with the vanilla seeds, season with honey and arrange in a baking dish.

Sprinkle the crumbs over the fruit and bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for 25 minutes. Serve warm.
