Ingredients

  • 4 egg yolks
  • 5 leaves white gelatin
  • 80 g sugar
  • 30 g white chocolate
  • 0.25 l hot milk (not boiling)
  • pulp of one vanilla bean
  • 0.25 L whipping cream
  • 150 g blackberries
  • 150 g raspberries
  • 150 g blueberries
  • 300 g Strawberries
  • mint

Instructions

    Soak gelatin in cold water. Whisk egg yolks and sugar over a bain-marie until frothy. Melt chocolate with vanilla pulp in the milk, then slowly fold into the egg mixture. Re-whisk over a hot bain-marie until creamy, take 1/3 aside.

    Squeeze out excess water from gelatin, dissolve it in the cream, then let cool while stirring. Chill the mousse until set. Clean and wash berries. Slice strawberries lengthwise into thin slices and arrange star‑shaped on plates.

    Place remaining berries in the center. Warm the vanilla sauce again and drizzle over the fruit. Scoop portions of the mousse with a spoon and place on top of the berries. Garnish with mint leaves.
