Vanilla Lavender Cream with Strawberries and Olives

Ingredients

  • 300 g Strawberries
  • 100 g wild strawberry
  • 50 g black pitted olive
  • lavender sprig (for garnish)
  • 20 g flour
  • 30 g cornstarch
  • 1 vanilla bean (the seed)

Instructions

    Heat milk with lavender buds until boiling. Whisk sugar and egg yolks until frothy. Stir in flour and cornstarch, add vanilla seed. Pour hot milk through a fine sieve into the egg mixture while whisking vigorously. Bring to a boil and simmer for about 2 minutes, stirring, until thickened. Cover and chill in the refrigerator for approximately 4 hours.

    Wash strawberries and cut into small pieces. Slice wild strawberries. Quarter olives. Mix olives, strawberries, and wild strawberries and arrange on plates as a bed. Using a spoon dipped in hot water, carefully scoop small nodules from the vanilla custard and place them atop the berries. Garnish with lavender sprigs.
