Vegetarian Vegetable Tart with Goat Cheese

Ingredients

  • 250 g flour
  • 1 pinch salt
  • 1 egg
  • 160 g butter
  • 2 Zucchini
  • 200 g Cherry tomatoes
  • 150 g broccoli florets
  • 2 Eggs
  • 200 g Sour Cream
  • 2 tbsp heavy cream (at least 30% fat)
  • pepper (ground)
  • nutmeg
  • 150 g goat cheese (rolled)
  • butter (for the pan)
  • flour (for the work surface)

Instructions

    Mix flour with salt, sift onto a work surface, make a well in the center, crack an egg into it and distribute butter pieces around the well. With a knife chop all ingredients coarsely and quickly knead by hand into a smooth dough. Shape into a ball, wrap in cling film and refrigerate for 30 minutes. Preheat oven to 180°C with top and bottom heat.

    Wash and trim the vegetables. Slice zucchini thinly or shave it, halve the tomatoes, blanch broccoli florets in boiling salted water for 2 minutes. Remove, shock in cold water, drain well.

    Whisk eggs with sour cream and heavy cream, season with salt, pepper and nutmeg. Slice goat cheese into rounds. Butter a tart pan, roll out dough on floured surface slightly larger than the pan, line the pan so that 1.5–2 cm of dough hangs over the edge. Prick the base with a fork several times and spread sour cream over it.

    Arrange zucchini slices side by side, top with goat cheese rounds and cherry tomatoes. Sprinkle broccoli florets on top, season again with salt and pepper, press excess dough edge into the center, bake in preheated oven for 25–30 minutes until golden brown. Remove, let cool briefly, lift out of pan and serve.
