Ingredients

  • 0.5 l milk
  • 1 Vanilla bean
  • 5 egg yolks
  • 100 g sugar
  • 30 g flour
  • 1 pinch salt
  • plums (about 120 g each)
  • blackberries (about 120 g each)
  • 2 pears

Instructions

    Slice the vanilla bean lengthwise, scrape out the seeds and stir them into the milk, then bring to a boil.

    Beat the egg yolks with sugar in a bowl until creamy, folding in the flour as you go.

    Pour the boiling milk into the egg mixture, return everything to the pot, remove the vanilla bean, and simmer over low heat while stirring constantly until it thickens.

    Strain the vanilla custard through a sieve, let cool, dusting the surface lightly with sugar to prevent skin from forming.

    Wash, dry, and clean the fruit. Pit the plums, peel the pears, and remove cores. Cut fruit as needed.
