Vanilla Ice Cream

Ingredients
- 0.5 l milk
- 0.25 L whipping cream
- 1 Vanilla bean
- 7 egg yolks
- 200 g sugar

Slice the vanilla bean lengthwise, scrape out the seeds and stir them with the vanilla pod into the milk-cream mixture until it boils.

Beat the egg yolks with the sugar in a bowl until creamy.

Pour the boiling milk into the egg yolk mixture, return everything to the pot, remove the vanilla pod, and cook over low heat with a wooden spoon until the custard thickens; do not let it boil.

Strain the vanilla custard through a sieve, cool it in ice water while stirring occasionally.

Transfer the chilled custard to an ice cream maker and churn until ready.

(If no ice cream maker, pour into a shallow metal dish and freeze, stirring every 15 minutes during the first hour).

Serve by scooping with an ice cream scoop.
