Vanilla Sauce with Snow Dumplings

Ingredients

  • 6 egg whites
  • 200 g sugar
  • 1 pinch salt
  • 0.5 untreated lemon (grated zest)
  • 1 tsp lemon juice
  • 250 ml milk
  • 250 ml Whipping Cream
  • 1 Vanilla bean
  • 5 egg yolks
  • 100 g sugar
  • 2 tbsp sugar
  • mint

Instructions

    Whisk the milk and cream with the split vanilla bean, bring to a boil.

    Beat the egg yolks with sugar until creamy. Stir in the hot milk-cream mixture and whisk over a bain-marie until thickened.

    For the snow dumplings, beat the egg whites very stiffly, fold in sugar, salt, lemon zest and juice. Bring water to a rolling boil. Using two wet tablespoons, drop spoonfuls of batter into the water, let them glide into the non-boiling water, cook for 1 minute, flip, then cook another minute.

    Arrange the snow dumplings on top of the vanilla sauce.

    For decoration, dissolve sugar in a little water in a pot, bring to boil and reduce to caramel. Drizzle over the dumplings and garnish with mint before serving.
