Ingredients
- 2 Vanilla Beans
- 250 ml milk
- 50 g sugar
- 2 egg yolks
- 20 g cornstarch
- 100 g whipping cream
- 1 tsp grated lemon zest
- Strawberries (for garnish, sliced)

Slash the vanilla beans, scrape out the seeds and add both to a pot with the milk. Warm, then remove from heat. Whisk sugar, egg yolks, cornstarch and a quarter of the vanilla milk together until smooth. Gradually pour this into the remaining milk while whisking constantly, stirring in the vanilla beans first, then slowly reheat. When it thickens slightly and starts to bubble, take off the heat. Let the custard cool, stirring occasionally. Whip the cream stiff, fold in lemon zest, then lift into the custard.

Fill small glass bowls with the vanilla pudding and serve garnished with fresh strawberries.
