Parisian-Style Flan

Ingredients
- 250 g flour
- 125 g butter
- 1 egg
- 50 g sugar
- Salt
- butter (for the pan)
- 1 l milk
- 50 g vanilla sugar
- 5 eggs
- 150 g sugar
- 125 g cornstarch
- 300 ml whipping cream

Sift the flour onto a dough board or into a large bowl. Add the butter in chunks. Whisk the egg. Add the sugar, whisked egg and a pinch of salt and quickly knead everything into a dough. Cover the dough and let it rest in the refrigerator for about 1 hour.

Roll out the dough and line the greased baking pan with it, shaping a rim about 3 cm high. Place back in the fridge to chill again.

Bring the milk with vanilla sugar to a boil. For the custard whisk the eggs with sugar and cornstarch. Stir in the cream. Then pour the boiled milk into the mixture in a thin stream while stirring continuously. Return everything to the pot and stir until creamy. Spread onto the dough base and smooth the surface. Let cool.

Preheat the oven to 200 °C fan.

Bake the flan in the oven for about 30 minutes until golden brown, and if desired activate the grill function during the last 5 minutes.
