Chocolate Pudding with Meringue

- 125 g dark chocolate
- 6 egg whites
- 1 l milk
- 6 egg yolks
- 100 g sugar

Melt chopped chocolate in a double boiler. Whisk egg whites until very stiff. Bring the milk to a boil in a deep pan, then fold the meringue into a large flat cloud, letting it set for a few minutes on both sides (turn with a foam ladle). Drain onto kitchen paper.

For the chocolate pudding, gradually stir egg yolks and half the sugar into the chocolate, add slightly cooled milk, and whisk gently in the double boiler until lightly creamy.

Pour the pudding into a bowl, place the meringue cloud on top.

Melt remaining sugar over gentle heat until golden‑yellow caramelizes; drizzle over the meringue and serve immediately.
