  • 800 ml milk
  • 0.5 tsp lemon zest
  • 50 g sugar
  • 80 g semolina
  • 50 g poppy seeds
  • 2 Apples
  • 0.5 untreated lemon (juice)
  • 1 tbsp apple juice
  • 1 pinch cinnamon
  • 2 tbsp sugar
  • apple slices
  • mint
  • powdered sugar (for dusting)

Instructions

    Bring the milk with the lemon zest and sugar to a boil. Sprinkle in the semolina and poppy seeds, stirring continuously for 5-10 minutes until it thickens into a dense porridge. Pour into pre-rinsed ramekins and chill for at least 3 hours.

    For the compote wash, peel, core, and dice the apples. Drizzle with lemon juice. Cook with apple juice in a pot for about 5 minutes until the apples soften. Season with cinnamon and sugar to taste.

    Serve the pudding on plates topped with the apple compote. Garnish with apple slices, mint leaves, and dust powdered sugar before serving.
