Ingredients

  • 1 kg unripe, green walnuts
  • 1 vanilla bean (pulp)
  • 1.3 kg sugar
  • 2 peppercorns
  • 1 tsp peppercorns
  • 2 Bay leaves
  • 3 Cloves
  • 1 pinch nutmeg (freshly ground)
  • 0.5 tsp Salt

Instructions

    Wash the nuts, pat dry, puncture each with a needle multiple times, place in a tall vessel and cover with cold water. Let stand for about 1.5-2 weeks, changing the water daily.

    Then bring the nuts to a boil with plenty of water and simmer for about 30 minutes until they turn black. Drain, shock in cold water, let drain and split in half before filling jars.
