Mango Apricot Compote

Ingredients

  • 3 ripe mangos
  • 500 g apricots
  • 500 ml orange juice
  • 2 tbsp lemon juice
  • 500 g gelatin sugar (3:1)

Instructions

    Peel the mangos, cut the flesh into slices, remove the pit, then dice. Wash the apricots, blanch them, peel, halve, remove the pits and dice the flesh. Place all fruit cubes in a bowl and add the juice to reach 1.5 kg.

    Add the gelatin sugar and let stand for two hours. Then heat over high heat while stirring constantly until it boils for four minutes. Fill prepared jars, seal tightly, and allow to cool.
