Mango Coconut Jam

Ingredients

  • 2 mangos
  • 250 g gelatin sugar
  • 50 g coconut flakes
  • 1 lime (juice and grated zest)
  • 40 ml coconut liqueur

    Peel the mangos, remove the flesh from the pit, roughly cube and weigh.

    Weigh the same amount of gelatin sugar. Combine the mango flesh with the gelatin sugar and lime juice in a pot and let steep for about 2 hours. Then add the coconut flakes and liqueur and bring to a boil. Boil for four minutes while stirring until bubbling (do a set test), then pour into prepared jars. Seal well and invert. After a few minutes flip over and allow to cool.
