Apricot or Strawberry Jam

Ingredients

  • 800 g apricots (or 700 g strawberries)
  • 1 orange (unprocessed)
  • 300 g extra-agar sugar (2:1)
  • 1 packet citric acid

Instructions

    Wash the fruit, optionally pit and chop. Wash the orange hot, dry it and cut off the zest without the white pith. Slice the zest into fine strips. Squeeze out the juice. Mix the fruit, orange zest and juice, agar sugar and citric acid in a pot. Let steep for 1 hour.

    Bring the mixture to a vigorous boil while stirring, then simmer for at least 3 minutes until sparkling. Fill jars with jam and seal immediately. Place jars on their lids for about 15 minutes, then flip them over and let cool.
