Turkey Roll-Ups

The turkey roll-ups with warm asparagus from Spoonsparrow are the perfect low-carb snack for between meals!
Ingredients
- 150 g White Asparagus
- 5 g ginger (1 piece)
- 0.5 tsp olive oil
- 0.5 lime
- Salt
- Pepper
- 4 stalks chives
- 30 g smoked turkey breast (2 slices)
Instructions

Wash the asparagus, trim the ends and peel the spears generously. Peel the ginger and grate finely.

Heat the oil in a non-stick pan over low heat. Add ginger and asparagus, turning occasionally, and sauté for about 7 minutes on medium heat.

Squeeze half a lime and pour the juice over the asparagus. Season with salt and pepper.

Wash the chives, shake dry and lay two stalks horizontally side by side on the work surface.

Place one slice of smoked turkey breast on each pair of chives. Distribute the asparagus over the turkey slices and roll them up tightly.

Carefully knot the chive stalks to secure the rolls and serve immediately.
